The Vice-Chancellor of the University of Energy and Natural Resources (UENR), Prof. Elvis Asare-Bediako has disclosed that the University would soon commercialize its annual Food Bazaar to enable the public to participate in it. He said the Department of Ecotourism, Recreation and Hospitality, which is the organizing Department, would collaborate with the Centre for Entrepreneurship and Business Incubation and UENR Enterprise to unleash the economic benefits of the event.
Speaking at this year’s edition of the Food Bazaar held on Thursday, August 25, 2022, at the University Field, the Vice-Chancellor expressed satisfaction with the programme and commended the Department for its innovative culinary skills to project both local and continental dishes.
The Head of the Department, Dr. Yaw Boakye Agyemang emphasized that the Food Bazaar seeks to propel students in the Department, especially in the final year to develop product ideas and bring out their entrepreneurial skills against employment after school.
The dishes which were prepared according to the various regions in Ghana included Fufu with Ebunuebunu or Kyinkaase, Ampesi with garden eggs stew, Akponkye Nkrakra, Akrantie Nkwan, Akrakro, Fante fante, Banku and red pepper, Ga Kenkey, Aborbi Tadzi, Aky3k3, Plantain with Pr3K3S3 and Nsusuaa, Kelewele and Gizzard, Waakye, Tuo Zaafi, Tubaani, Jollof and Fried rice, Grilled Tilapia and Guinea fowl. Assorted drinks such as Zomkom, Pito, Sobolo, Asana, Pineapple ginger drink, and Coconut among others accompanied these meals.
This year’s event recorded massive participation which featured the Foundation Vice-Chancellor, Prof. (Mrs) Esi Awuah, the Acting Pro Vice-Chancellor, Prof. John K.M. Kuwornu and the Registrar, Solomon Panford, Esq.,APR as well as patronized by staff and students. The event was organized in collaboration with the UENR Chapter of the Local National Union of Ghana Students on the theme “Entrepreneurship for Sustainable Development: The Role of the Hospitality Students”.
