Dr Rita Dankwa is a Lecturer in the Department of Food Science and Technology at the University of Energy and Natural Resources. She holds a PhD in Food Science from the University of Pretoria (2024), South Africa. Her expertise spans areas of Food Science and Technology, with particular focus on food chemistry, sensory science and food processing. Her research interests focus on improving the quality of agricultural produce, promoting the utilisation of underutilised crops, and advancing food security and sustainability.
